I can't think Galliano. The character of Roux is subtle and natural; Galliano is neither. I have no guess, though...but Galliano seems way too over-the-top.

I'd say Karl w/ the pony tail and the hilarious one liners. He quite likely knows Karl pretty well via Vanessa.
Galliano NO...and hardly Keef Richard (LOL...yes I meant this spelling). Keef would be Pirates, not Chocolat.
