In our seventh episode of Haute Cuisine we venture off to the Hollywood Hills where we meet our friend Chrissy Teigen. At her and fiancé John Legend’s beautiful home, Teigen and Mommy Teigen both share their secrets to creating the best Papaya Salad (hint: it’s in the way you cut the vegetables!)
Though Legend wasn’t there to perform for us while we cooked, Teigen provided us with plenty of entertainment to get us through the afternoon. Chrissy Teigen’s Thai Papaya Salad
2 cups shredded papaya Half a lime, peeled and cut in half (2 chunks) 6 cherry tomatoes, halved 2 thai birds eye chillies (we use 6 because we are insane) (can also use 1, obviously) 2 roasted chillies (mostly for flavor -- not very hot) handful of long beans cut into 1-2 inch pieces (can also use green beans but long beans are best -- asian markets) 2 large cloves garlic 2 tablespoons fish sauce 1 tablespoon palm sugar wedge of cabbage for serving roasted peanuts to garnish Using a mortar and pestal, smash the garlic and chillies. Add the palm sugar, chunks of lime, fish sauce and tomatoes. gently mash. Add papaya and long beans and toss with a spoon. Pour into a bowl and serve with cabbage wedge and roasted peanuts.
